Sunday Pairs Event

 This was the Sunday that we played pool with whoever we signed up with and we had a full rack of players, 12 teams. That means we all played 11 games. I heard from a few that they would like that to be the format for more than one time in a month. Maybe...We will see. Isn't that what your Mom always said?

The winners were Barb and Butch Brooker with 9 wins. Sally and Paul Kelleher were second winning 8 games. And new Sunday players and new to our park this season,  Diane Justice and Jeff Utter won third place with 7 wins.

See you next Sunday for mixed doubles play. If you sign up, show up. And if you have an issue come up, scratch your name off the schedule. Thank you all for coming to play. The more the merrier!

Our daughter-in-law Laura lost her father Paul Hike SR this past week. He was in a lot of pain at the time of his passing so now he can rest. All of us who have lost a parent know the stress of it. And our thoughts are with her.

Tasty Beef Bumps

My friend Mickey puts some very delicious-sounding recipes on Facebook. And I might add she is a very good cook. It's in her genes! The problem with many very good recipes on Facebook is that they are in a video format. Have you ever tried to follow and make a video recipe? I have a soft spot for beef and cabbage recipes and there was one that looked very promising so I jumped on board. First of all I searched the internet for a printed version to no avail. And I suppose now someone will send it to me.😏

Tasty Beef and Cabbage Bumps 12/29/2023

1# ground beef

½ small cabbage, shredded

1 small onion, chopped

1 egg

1 tsp salt

½ tsp pepper

1 tsp Paprika

½ tsp Tumeric

2 cloves garlic, crushed

Mix and form into 6  “bumps”. Place in a greased 8” x 8” baking dish.

Bake at 360 degrees for 45 minutes. Remove from oven

Mix together 3-5 OZ of mozzarella,shredded, 

2-3 TBS chopped parsley, and 2 TBS Mayo. Place spoonfuls evenly 

on bumps. Bake @ 360 for 10 minutes

Merry Christmas to all!

 

What I want and what I have...are the same thing.

I saw this quote on a friend's post and it seemed true to me. There is so much greed and power hunger in the world that it becomes more difficult to maintain a positive outlook. I will keep on, keeping on. I wish everyone in the whole world could say that what they want and what they have are the same thing. So that is my hope for the coming year. Unrealistic? I know it is. I will keep hoping...

Flood Gates Open

 The next couple of weeks the flood of Winter Texans will be flowing into the park. Our park population will nearly double for January and February and then in March it all reverses itself.

As for us, we are settled in. It seems to take a little longer each year to establish our routine. I keep thinking it will get easier and it has a little. It took us much longer than I anticipated to transition from the motorhome to our Texas home integrating that with our Iowa home. I am now what I can safely say comfortable with all of it. Our todo list and our want to change lists are in the past. That can change at any moment. I say that not seeing anything on the horizon.

We went to Sam's Club in McAllen yesterday and judging from that we will keep our Sam's Club visits for Iowa. It is just a few days from Christmas so I suppose that has something to do with it. Butch had his leg run into by a woman pushing a cart. And the isles were full of people and carts trying to go in all four directions.

It was definitely not a place for us rural Iowa folk who like our wide open spaces. I don't even like to go to our hometown Fareway when the number of people is too plentiful.  Oh well, we are happy as clams and grateful as all get out for the life we have the privilege of living and we hope you are too.

Flying with the times!

 An old lady once told me that as you age, time goes faster, and now that old lady is me! Although, yesterday an old man, upon finding out my age, told me I didn't look it. Men are such flatterers! 

Butch and I decided to go to Mexico yesterday because we were out of a few things we tried to keep on hand. But first, we went to the Christmas program the elementary students from across the street perform for us every year. Their teacher told us they have a curiosity about Trophy Gardens and enjoy coming here. The program was such fun to watch and it was encouraging to see the interest, talent, and enthusiasm for music the 4th and 5th graders enjoy. I hope more of us old folk decide to come next season. Here are some pics of the school kids.









After the program, Butch and I went to Nuevo Progreso, Mexico. It was a very busy place. One of the biggest surprises was the immigrants on the return bridge waiting to be okayed to enter the USA. They covered nearly half the bridge. We have never seen that before. More on that later.

We went down to Hectors and I emailed my list of things I wanted and he had them bagged up for me so the transaction didn't take long. We usually like to visit with Hector a while but he was too busy so we left him to his business.

We then went back to 'Jessica's' where we usually have lunch and when we arrived we saw some Trophy folk and joined them. They were going for pedicures after lunch and we decided to join them. Butch and I have never done that before but we were up for an adventure. It was wonderful and we will go back for more. It cost $12. I have nothing to compare it to but I am thinking it was a very good deal! Here are some pictures taken of the pedicure adventure.

Butch and I were so busy before we left Iowa that we missed his Podiatrist appointment so this event was a blessing. His feet have never looked better.

After the pedicure, Butch and I headed home. The walk on the bridge is one I think every American should make. First of all, it was very sad. There were several nationalities represented, some orientals, and mostly people who looked like us. The languages spoken were not SPANISH. We never heard one word of Spanish or anything that sounded like it. In speaking to a young Hispanic woman ahead of us in line she speculated they were mostly Ukrainian. They were all well-dressed, well-kempt, and polite.  They mostly looked like us. Not one of them looked shady in any way. Our world is such a mess on so many levels and we all need to put ourselves in their shoes because there is no guarantee that we will not be in the same predicament someday. One little red-headed, blue-eyed boy of about 3 caught my eye. He and his parents will be sleeping on a bridge tonight.

Remember Butch and his episode of Vertigo? I had the same thing happen to me. I know how odd that sounds and believe me it was ODD. I woke up and went to the bathroom about 3:00 and when I came back to bed and sat on the edge of the bed, the room started spinning. I immediately tried to follow the same maneuver we had for Butch and it worked. I wasn't very sure I had remembered it properly. The vertigo went away but nausea stayed with me for a long time. I hope to never have it happen again but in talking to the folks who told us about the maneuver it still happens to them. Not often but it still lurks.
Getting old isn't easy, my friend!

My Friend Colleen

 Colleen and I walked the bike trail in Jefferson every morning at 7:00 am. We both agreed it as the best possible way to start the day. Colleen was a year behind me in school and her sister Denise was in the famous Class of '61'. The O'Brien girls and I have had a nearly lifelong connection. Both of them are writers.

This column was in the Greene County News Online. Aside from that, this is my blog and I have the pleasure of posting what I think is good writing. This qualifies.

“Will you be a dictator?”

This question was asked of once-president Trump this fall in an interview with Sean Hannity, as well as by countless political columnists, broadcast news folks and authors of books on Trump from both sides.

He says, “Only on Day One.” This is when he will close the borders and “drill, drill, drill,” to cop a quote from Sarah Palin, a political has-been before she even started as a 2008 GOP vice-presidential candidate. He sometimes says he’ll get rid of people and entities that have not been “nice” to him: CNN, MSNBC, certain prosecutors, some judges. It is a long list of things to do on the first day of a presidency.

Do you ever wonder if he’s seen the list of people he’s not been “nice” to?

The Donald, as he was known when he played a third-rate TV conman,  pretends ‘Will you be a dictator?’ is a conspiracy question from the looney Left or a made-up accusation from the “fake news” media (his borrowed term for the legacy press like The New York Times, The Atlantic magazine, etc.). The “fake news” term came from the mainstream press labeling Fox News with that little bit of wit because of their continued lying about Trump winning the election of 2020. Thus, this is the Far Right being adept at blaming the Left for what the Far Right itself does – a bullying tactic. It’s a psychological trick that has become obvious and tiresome.

And he continues to throw in frightening ideas like dismantling the Department  of Justice and the entire “deep state” –  to him, this means the middle class bureaucracy of the United States – all those people who work in the government at ordinary bookkeeping jobs for $50 or $60 thousand a year and if eliminated would shut down the government. Do the folks working in these positions their entire lives realize this election is about losing their jobs?

Do women understand that the Supreme Court’s repeal of Roe v. Wade was heavily influenced by The Donald? That it is the beginning of the re-subjugation of women, one of the first things a misogynist who wants to be a despot pounces on to begin his reign? Talk about a sickening possibility:  it makes me wonder if I would buckle under? Would I go along with being muzzled? Who knows? I’ve been challenged for writing something unpopular; I survived:

It was 1987, when I freelanced for a newspaper at Lake Tahoe in Nevada. It was Martin Luther King Holiday, and as had been going on for 20 years, a large coterie of Black wealthy and political from Oakland, CA, came to Tahoe for the weekend to raise money. They held dances, skied, ate in the expensive restaurants,  shopped in the tourist stores and donated money for disadvantaged kids of color in the San Francisco Bay area. After the highlight of the weekend dinner dance, several partygoers retired to the posh restaurant on the Lake for after-dinner drinks. At the bar near them three upstanding white men from town (a bank president, a junior high principal and a wealthy retiree who lived on the Lake), held corks over candlelight and blackened their faces.

The sommelier of the restaurant called me at 1 am to tell me what was happening and asked if I could write about it because I worked for the local newspaper. She said she had tried to get her boss to “eighty-six” the three men, but he would not toss them out because they were regular customers as well as upstanding citizens of the town.

Soon, the black men in the adjoining room noticed what was going on – white men blackening their faces like in the minstrel shows of the 19th and early 20th centuries– a commonplace theatrical way to amuse white men by portraying Blacks as ignoramuses and buffoons.

It was a historic racist mockery played out in late 20th century time, and my friend, a black woman whose parents had been diplomats her entire life, was determined that the situation be publicized.

The next morning, I contacted the head of the Oakland group, the manager at the bar, the banker and the principal (I could not get a response from the rich lakeshore fellow).

The head of the fundraising group from California told me flat-out they would not be returning to this “once-favorite venue” for the annual fundraiser. That meant that after two decades of filling the coffers of a Lake Tahoe resort, they would find another place less racist, less rude, less behind the times.

The banker said he could not believe I’d publish something like this when his bank gave so much money to the community. The principal said I would ruin his career. These men obviously did not understand the role of messenger in a case like this; they were the ones who did the deed of racially dehumanizing behavior, not I.

I wrote the column, sent it to my editor, who did some checking and okayed it, warning me that things would hit the fan and to be prepared.

The publisher was the first to throw the dirt my way. “You cannot publish this column,” he said and turned away from me. I said I was a freelancer, not his employee, whose copy had been approved by the editor, and he’d better talk to him, the editor being his employee. My editor maintained the necessity of the column as a piece of reputable news in a democracy.

The column went to press.

 And then the deluge. It was more than two weeks of letters to the editor, pro and con. It was phone calls to me – threatening, lambasting, sometimes with the caller’s name, mostly anonymous; it was also congratulatory and well-wishing people. And it was a note from a fellow columnist in the big newspaper in Reno, criticizing  me for attacking a fellow he admired (the principal). I was shocked at this columnist hitting out, for he was a liberal like me, and I had admired his writing and been friendly with him in a professional way. He was defending a friend, fine; but he was denigrating his own belief in his country’s long, slow attempt at promoting the equality of all men.

The point of this is that racist behavior must be exposed to the light of day. We cannot pretend the most famous Tweeter of all Tweeted for the Mexican country’s benefit as a “caravan” of Latinos marched toward America: “This is an invasion of our country, and our Military is waiting for you.” He liked hyperbole. A young boy brought here by his parents illegally and who had finally become a citizen thought he could now be free from fear, but discovered the law still picked on him. “It’s because I’m brown,” he said. “It doesn’t matter that I’m a citizen now. I was naive to think it would change things.”

In 2017 The Don restricted legal immigration, and two dozen people died in detention, including seven children. Even before that, he said, “Mexico is not sending its best, people coming by the hundreds.” And his favorites: “Mexicans are drug smugglers, criminals and rapists. Some, I assume, are decent people”; and suggesting a judge should recuse himself from a case because of the judge’s Mexican heritage.

This is not a man to vote for again, so keep thinking about his threats/plans/lies and promises about being a dictator. He vociferously admires countries led by dictators – Russia, the Philippines, North Korea. Laugh at him if you can, tell jokes about him if that relieves you, don’t ignore him.


 Take him seriously. It’s difficult to trust a lying man about anything, especially this one, because this liar could be elected by your vote as the dictator of your existence.

This and that

 My friend from our Magnolia years, Deon uses 'This and That' when she posts something difficult to label. We need to get to Trails End and visit our Magnolia family.

Our friend and neighbor Sandi is home from the hospital. She has what they call Pyloric thickening. Another of those things that can happen to people of an age. You can do a google search for an explanation if you want to know more. We are glad she is home because the neighborhood has a big hole if she isn't here! 

I would like to say there are not enough hours in the day to get done all I would like to do. However, that is not entirely true. 24 hours is plenty but my energy clock is winding down. We have both become members of the Nodding Off generation. While watching TV, we might just nod off. We are both healthy and happy and that is more than enough to live on.

I forgot about last Saturday

 Last Saturday Renie, Linda, and I walked our usual 2-mile route at 7:00am. It was Winter Ranch's garage sale day. Winter Ranch is the RV Park next door to ours and is part of the same ownership. So as we were walking, we were getting an early peek at garage sale items. I spotted a golf bag with clubs and thought Butch might have an interest and I also spotted a couple of chairs that had been in an RV, foldable and on the small side, that I could see replacing the uncomfortable folding chairs we were currently using.  I came home and told Butch about it as he was still in bed. He sacrificed some sleep and delayed breakfast to scope things out. We ended up with the chairs and the golf stuff.

Tuesday, December 12

This past week

 I have 5 minutes until I meet 'the girls' for our walk. Renie has a prior commitment but Linda and I will do our usual route and then I will come back here and finish all I can remember from the past week.

Last Thursday Butch and I took care of several loose ends. We made our first stop at the dermatologist for follow up. No cancers were found but we do have some skin issues. Minor skin issues. Next stop was at the CVS Pharmacy in Donna TX to see what the hold up was in getting my meds. I needed to contact my Iowa heart doctor to get that cleared up. And then the next stop was at Dr. Vela's office to pick up the paperwork we needed to fill out before we could become patients of his in an emergency. It is called continued care. He is in Alamo, so much closer if we needed to see him. 

And then I wanted a haircut so we stopped at Bertha's so I could get a haircut with Sally. Sally was doing a perm so it was going to be a LONG wait, we left with the idea of coming back later. This particular salon does not work by appointment. It seems strange to us but has worked for them. They have several women working there and it is always a busy place. We went to Costco and Chase Bank before returning to Bertha's only to find a second perm had come in the meantime. I gave up on the haircut and returned the next day for it. Sally told me then that no appointments are ever made and if you want any service you walk in whether it is a perm or a trim. She said it is very unusual to have two perms walk in back to back and that is what had happened.

Saturday our neighbors Bill and Sandi went to ER because she was having chest pains. She was admitted to the hospital and has been there ever since. They at first thought it was heart-related but have backed up on that. And then maybe Gallbladder. So nothing definitive yet; she is in the process of getting processed.😊

Bill and Sandi host happy hour every day at 4:00 at their place and we have been filling in. Yesterday there were 10 of us. It doesn't happen if it is too cold or raining. It is a pleasant way to wrap up the day. It is a bring-your-own drink and no controversial conversation event so we can always say a good time was had by all.

Sometime in the past week, Sandi told Butch he had a deadline for getting Christmas lights put up. He got it done!






The blue color is not paint. I took these with my phone and didn't fuss with them like I usually do.

The next ones are our neighbors. There are more now than when I took these.

Some people have trouble with change. I wrote this to try and simplify the size of the change. Don't sweat the small stuff. 😁


"The standard platform for Sunday's pool event consists of pairs of people signing up to play in a competition. Your playing partner is determined by drawing a name from a hat. There has been one small change to this platform. On the last Sunday of the month you are playing with the partner you signed up with.

The rules of play have not changed. Nothing else has changed and there are no plans to change anything.  If you are not happy with the change the solution is simple. Do not sign up for the event if it is the last Sunday of the month."

Havin' Fun in the Sun

 Our temps for the whole week are in the low 70's day and 50's night. Some people call that perfect. For us it is close. Perfect is when you do not need a jacket day or night.

Butch is fully recovered from his vertigo experience and we are over the top with gratitude.

Our mixed doubles pool yesterday was fun. Butch and his partner one first with 6 wins and me and my partner had 5 wins. There were 5 teams with 5 wins so it wasn't a big deal. There were 9 teams signed up.

Butch was given orders from Sandi D. to get the Christmas lights up...and so he did. So perking up and decorating our "yard" was on the agenda and it looks pretty spiffy around here...until the tree sheds some more leaves.

My phony grass is working just fine. It held up well through the summer and is still looking fine now. A small sprig of a plant comes up now and then where the joints are but it is easy to pick out.

We Had a Leak

 And we knew we had a leak for quite a while now. We were prepared to have it be a costly thing to fix. We had a fellow who does many build and repair jobs here in the park look at it and fix it. It turned out to be a simple thing, some caulking around some screws. Small job, small fee and it took care of what could have been a large problem. It feels so good to get these issues solved.

The leak occurred in the utility room attached to the park model. Now we can enjoy the rain, knowing it is needed and will not be a problem for us. We have been getting some small rains now and then and it is slowly helping the drought situation. We do not mind a bit having an abundance of choices for indoor fun.

Our Yesterday

 A couple of nights ago Butch had an "incident" when he got up around 3:00 AM to go to the bathroom. He said the room was spinning around him. It was scary because we had no idea what was happening or why. So I got on the internet to try making sense of it all and found lots of info, such as dehydration, low blood sugar etc and we didn't think any of them applied really but did our best to rule them out. 

And then!!! We went to happy hour and believe it or not found all of our answers among our peers! It seems this is a common problem among the "elderly". Our neighbors across the street said this happened to them and that Dan and Linda helped them with a solution. Dan and Linda happen to be trivia players that we are well acquainted with and they sent the solution to me. There are crystals in your inner ears that can get displaced and cause this room-spinning effect. The solution is fairly simple. Who knew!! Well, Dan did and sent me the directions and I am happy to share them with you.

And yes, it did work although Butch did say the solution was a bit traumatic.

Where to start?

 I am so far behind I am at a loss as to where to begin. 

Trivia has been going well. We consistently have 5 teams and the winning team does change and I take that as a good indication of balance. Two weeks ago the questions were tough. I had used ones from the time I was writing down questions and answers when we were playing at HyVee in Jefferson. (2018) I always feel everyone is in the same boat, making it fair. I can tell by the overall scores if they were easy or difficult. They liked the questions better last night. I aim for the middle of the road.

Butch and I had a pleasant time playing pool last Sunday. For the first time, the format was playing with the person you signed up with. Usually, you would draw for a partner but now, once a month,  we will play with the one we signed up with. There were 12 teams signed up so each team had to play 11 games. Butch and I won with 10 wins out of 11. It went well. 

Our weather has reminded me of Iowa in December. Cloudy, cool and dampish. Way back in early fall, I had heard that Iowa would be a fairly warm winter and South Texas would be cool. It seems to be leaning that way here at least. Fortunately, there are so many different activities that can take place indoors that make being here pleasant regardless.

Renie, Linda and I have been doing a 2 mile walk regularly at 7:00 AM. We don't go if the temperature is below 50 degrees or if it is raining. We haven't missed too many days.

So we are firmly entrenched in our winter activities and having a good time every day...Till next time!

It's time for Bernie's fruitcake!

Recipe:   Bernie's Fruitcake   

Author:   Bernie Craig

2 C Flour

1 1/2 C Sugar

1 tsp Baking Powder

1/2 tsp Salt

4 eggs

3 T butter-room temp.

4 -8 oz. Jars Whole Maraschino Cherries (Drain 3 jars)

2 C Pecan halves or pieces

2 C Walnut halves or pieces

1 LB. Raisins

Sift together flour, sugar, baking powder and salt. Stir in eggs, one at a time. Add

remaining ingredients one at a time in the order listed, mix gently.

Pour in an ungreased tube pan. Bake at 300 degrees for 1 hour and 45 minutes.

Increase heat to 325 degrees and bake an additional 15 minutes. Let cool in pan

then remove. Wrap in foil or plastic and store in the refrigerator. Allow 1 to 2 days for

flavors to mingle before serving.

I never liked fruitcake until I tasted Bernies. :-)

Bernie was a dear friend of ours and he is still alive through his most delicious fruitcake. I had to beg for years before he would share the recipe. When I would ask for it he would say, " For you, I will always make as much as you want ." And in his special way, he is.

A Step Ahead

 I am trying to stay a step ahead and wish you all a very Happy Thanksgiving! We will be a small group of four sharing excellent food and playing games.


Gratitude is the glue that holds it all together!

Dear Blogger

 I have to apologize to you, blogger, my friend of 20 plus years, I am finding it difficult to devote the time it takes me to be creative with the written word. I lie in bed early in the morning or late in the evening and run through all the things I could share with the readers among you still paying attention and then I find myself with a few minutes to write and go blank.

Yesterday I went for a walk with my two walking buddies. Renie, Linda, and I meet each morning at 7:00 am and walk for an hour. It is a great way to kickstart the day. At 7:08 we heard a giant rumble in the sky and wondered if it was a low-lying jet, being not too far from the airport in McAllen. Later we discovered that it was SpaceX launch. After our walk, Butch and I went to Country Omelet in McAllen, on 10th Street for breakfast. We had heard only good things about it and found them true! We plan to go again soon. We followed that with a Costco visit, needing a few items. Then we went to Lowes, needing a few items. Finally, we managed to get back home. At one, we both went to the pool hall and played for a couple of hours. Happy hour next door at 4:00, followed by supper. I must have exhausted myself because I had trouble staying awake all evening. I finally gave up at nine and went to bed, sleeping soundly till morning. 

I forgot to mention I added a few loads of laundry in there and I truly love my new washer.  My clothes are cleaner and more water is extracted with the super duper spin cycles. My dryer time has been cut in half.

About a week ago I followed the advice of my former hairdresser in finding a new hairdresser. Bertha's is the name of the salon and it is directly behind Krautches Ace hardware store in Alamo on 7th street. They do not make appointments. I walked in and asked for a haircut from Sally. I was escorted to Sally's chair and Sally appeared and started in. She did exactly as I asked and as easy as that I have a new hairdresser.

Old Age Slowdown

 It quit raining earlier this week and I went on my merry way and forgot to fill you in. Sorry! It was a nice rain. A little over 2 inches spread out over 5 days and now we are back to sunshine and moderate temperatures. Yes, it is kinda like heaven here.

We bought a new washer and it was delivered today. The washer I had was cutting up bedding. So after buying new sheets, I was afraid to wash them. It was also deep and tough for me to get the clothes on the bottom. Thus the new washer. So now I have a frontload and that is what I am used to. After thinking back, I can safely say I had a frontload for twenty years or more.

Some of the women who play pool have decided to take the game a bit more seriously and play BCA rules. BCA rules are the national standard for pool players. If you are ever in a tournament outside the park you would be expected to play by BCA rules, not that I ever will! I am learning them because I want to play the national standard and have a firm grasp of what is expected. So far, so good!

I have made a bracelet or two, however I have had a hard time having enough free time to be bored. 

Our dermatology appointment was yesterday. We both had some spots attended to and some taken for biopsy. It was the usual routine. Results will be in a couple of weeks.

In a few minutes both of us will be headed to the pool hall. I will be playing with the aforementioned women.

RAIN!!!!

 Do you know how long it has been that we have enjoyed a 4-day rain? A very long time. The weather people told us it was coming, saying the finished total could be as much as 5 inches. It started in earnest yesterday. The pitter-patter of raindrops on our awnings reminds you to grab your raincoat if going out. It is very much needed. Not sure if it will be enough to drop the water restrictions. Oh, did I forget to tell you about the water restrictions for Hidalgo County Texas? Washing houses and driveways is prohibited. There are 3 pages of rules about water due to drought conditions. We are on day two of rain and rain is predicted for the next three days! We need it.

Coming to a Conclusion!

 I have come to the conclusion I get triple the exercise in South Texas as I do in Iowa. Now I am well aware that it doesn't need to be that way but it comes in a way in Texas that you do not realize it until you crash!

Yesterday we went to Mexico, needing a few items such as Gingivitis mouthwash, Volfenac and a zpac. No, neither of us are sick.  We try to keep one on hand. When we go to Hectors it becomes a two-mile walk. Before going, Renie and I had done our walk. And if you work in playing some pool you can see how you could rack up miles.

The main question we get from telling anyone we went to Mexico is "How is it in Mexico, specifically Nuevo Progreso Mexico?" It is fine! They have spruced things up so it looks much cleaner and they have pushed venders down the street a way so it isn't nearly as crowded getting started down the street as it used to be. Butch got his teeth cleaned ($40). As a general rule, everything costs more than it used to and that is because of the Peso/Dollar relationship. For instance, we had lunch at Jessica's and it was $5 in the past and $7 now. That shouldn't be much of a surprise to anyone. It was still delicious!

We came home and took a nap!

Turkey for Two

Every November I post the Turkey for Two recipe because sometimes you may find it handy for different or unforeseen reasons. The past few years I have been unable to find my preferred Butterball turkey roast with white AND darkmeat in the RGV. Yesterday I checked it out in HEB off of Veterans and was very surprised to find it! I bought two.

Read the label carefully and you will see the very important to me (White and Dark meat) Enjoy!!


Turkey for Two
Did you have a meal with friends and family on the holiday and miss all the turkey and dressing leftovers at your house? Or there are just the two of you and you do not want to cook a big ol' turkey for two people. I discovered an easy way to have it all. 


Grease the sides of your crockpot or use one of those nifty slow cooker liners ( I swear by the liners). Place a small package of dry stuffing mix in the bottom. Sprinkle with a 1/2 cup of water or chicken broth. Slice onion and dice a celery stalk and layer on top of stuffing. Place a thawed Butterball 3 pound turkey roast (found in your grocer's freezer) on top of celery and onion. Cook on low all day or high for 4-5 hours and you have the best of both worlds. A scrumptious turkey dinner for two with some for leftovers if you are moderate eaters.

Yikes!

I washed bedding yesterday and to my surprise I could have just thrown them away and been better off!

 We had some of this last season too but not nearly this bad. It is a Whirlpool upright washer and after consulting Mr. Google we find that it is not uncommon.

They suggest not to put sheets or other bulky items in a circle around the agitator and I admit that is what I did. I purchased new sheets before we came south. How much would you trust washing them in this machine?  I had one pair of Butch's shorts with a slit in them last season but mostly, the clothes seem to come through okay. Disconcerting to say the least! Looks like a new washer is on the agenda.😒 It will not be a Whirlpool!

Cabbage Roll Casserole


It's what's for supper. Maybe not tonight, but soon!


Cabbage Roll Casserole

Brown the beef and drain the grease.

Add the cabbage, sauce, onion, rice, and salt. Pour broth over the top.

Bake for one hour, stir, and continue baking until the cabbage is tender.


Ingredients

2 pounds ground beef

3 ½ pounds chopped cabbage

1 (29 ounce) can tomato sauce

1 cup chopped onion

1 cup uncooked white rice

1 teaspoon salt

2 (14 ounce) cans beef broth




Directions

Preheat the oven to 350 degrees F (175 degrees C) and

gather all ingredients.

Chopped cabbage, tomato sauce, onion, rice,

salt and cooked ground beef

Heat a large skillet over medium-high heat.

Cook and stir ground beef in the hot skillet until browned and crumbly,

5 to 7 minutes. Drain and discard grease.

Combine cabbage, tomato sauce, onion, rice,

and salt in a large mixing bowl.

Stir in cooked ground beef. Pour mixture into a 9x13-inch baking dish,

then pour beef broth over top.

Cover and bake in the preheated oven for 1 hour.

Stir, re-cover, and bake until cabbage is tender and rice is done,

20 to 30 minutes more.
