Been on a Quest

Butch's mother Marion, a good friend of mine and a very good cook, had a chicken and rice dish she would oftentimes make for a potluck offering. I really liked it! And I own the recipe somewhere but the where has been elusive. So I have found similar recipes and I have spent some time modifying them to match up with Marion's and I think I am close enough to unveil it. So here goes...

Nearly Marion's Chicken and Rice Casserole

Ingredients:

1 1/2 cup uncooked long-grained rice

3/4 cup chicken broth or water

2 cans "Creamed of" soup I like chicken and mushroom

1 medium onion, chopped

3 Chicken Hindquarters, seasoned as preferred

Mix the first 4 ingredients in a bowl, and spread evenly in a greased 9 x 13 pan. Season chicken on both sides and place in pan, skin side up, on top of rice mixture. Bake in a 350-degree oven for 1 to 1 1/2 hours. Let sit for 10 minutes before serving. Delish!

Chicken Hindquarters have been on sale frequently at Fareway.

Early morning fun

My computer setup is in front of the patio and it is often a thing where I stop what I am doing and watch the show in our backyard. Such was the case this morning.

Do you see a rabbit, squirrel, and two blue jays? How often do you see that in one camera frame? And it got better! The rabbit and squirrel started fighting, or was it playing? They both were jumping in the air at each other. I didn't get a picture of that but the jays had enough, early on and left before the hubbub started.

And then there was calm...

Former Paperboy

Butch was a paperboy in his youth and every now and again he will fold up a flier or paper in the manner he would before he would get on his bike and deliver the papers by throwing them on the porches of his customers. He was so inclined last night. Do any of you remember that way of delivering papers?

More DonWes Pics

It is hard for all of us longtime winter Texans to wrap our heads around the DonWes Flea market no longer being there. Here are a couple more pics.

Jason's latest invention

Our youngest son Jason has always been artistic and inventive. When he was about 10 we had an electric toothbrush that stopped working. He took it apart and returned it to its former glory. And it started there and has continued to this very day. Jason and his wife Laura are retired and I can assure you it has released an inventive giant, having all that extra time.

Here is a video of his latest endeavor. I am sure there will be many more "projects".

Keep 'em coming, Jason and keep recording them Laura! You make a great team!

DonWes Flea Market Fire

Here is television coverage of the fire that has wiped out the flea market. Hopefully, they will be able to rebuild.
