Thursday-Painting
Went to Karla's in Ogden to help her paint her living room a very soft gray. She has a new couch on order and it will be a darker shade of gray. Her living room will be very pretty when it gets all put together with her finishing touches and a nice calming place to come home to after a days work. We also had fun working together on a project. We finished up today. Butch came with me today and did a couple of chores. Then we lunched at The Lucky Pig and followed that up with Devon's homecoming parade. Devon is in middle school, plays the trumpet and is manager for the football coach. All this and gets good grades too! I was very impressed with the middle school band. They sounded very good and much better than the varsity band. I was surprised and I can get away with saying so because I do not know who I might be offending. It seemed the middle school students took their job far more seriously. I tried my best to get a picture of Devon but all I managed to get was one leg!
Finally took pictures of the backsplash. I hate to admit it but this was not a pleasant experience. It kept falling off the wall and I laid awake nights trying to figure out what to do about it. Elmer's Spray Adhesive was the solution. I wished I had some on hand before starting the project. The backsplash we used from Lowes was much easier and adhered very well.

Tuesday I put the backsplash in the kitchen. We both like it very much but it is not sticking as well as I would like so the jury is still out on this one. The stuff from lowes was not a problem. We will see...
Wednesday we went to visit the Van Houwelings in Prairie City. They have a countrified high-end resort. I say high-end because they have EVERYTHING but it is in the country and takes a ride over 3 miles of gravel roads to get there. They have a big farm house, a tiny house, a pool house, a pool, a hot tub, a pond and an island! And they are the most gracious and accommodating hosts you could ever ask for. I do not know if they have a moniker for their fine place but it could be dubbed Prairie View Resort. We were very impressed!

Computer story to share
Way back before we retired we played Bridge with a group of friends. We always had food involved in our sessions of course. One time Sue served a frozen fruit cup and it was special so I asked for the recipe. That was several computers ago and over the years I have had a variety of ways to save recipes. One of my ways of saving back in the day was in emails and really, saving emails as files is not something I would recommend these days. I am wanting to make this special recipe for an upcoming event so I began a search for it. I looked in my current places and it dawned on me it would not be there so I did a simple search, within my computer, for Sue's Frozen Fruit Cup and up popped an email file. I clicked on it and you can imagine the smile on my face when this is what I saw-

1 C. Water,(Or Apple Juice)
2 cn Mandarin Oranges,Drained
1 cn Crushed Pineapple,Do Not Drain
2 pk Frozen Strawberries,Thawed
5 Bananas
[Note: This is the only way I can get Butch to eat fruit. ]
Combine sugar and water and heat till sugar is dissolved. Cool to room
temperature. Combine with remaining ingredients. Place in foil lined
muffin cups and freeze till solid.

Keri and I rode this morning as we had walked yesterday. A chill in the air, sunshine with a few fluffy clouds. Beautiful morning! We rode to Roger's road and back. They have the new crossing finished and it looks very nice. So all crossings in Greene County are paved now on the bike trail.

Fun week!
Butch and I accomplished quite a bit this week and had fun doing it!
After finishing the backsplash in the motorhome, I did the backsplash in the house bathroom with the same pattern. Now I have ordered a different pattern for the kitchen in the same material. It is something we had always planned to do so we will soon be able to scratch it off our bucket list.

I finally did some housecleaning this week. It was clean late Thursday and Friday. Not so much today. It never lasts long no matter what so it is a short lived pleasure.
Butch's healing process(carpal tunnel) is coming along nicely and without incident.
Thursday night trivia group (partial) Came in 3rd this week!
Surprise visitors on Friday! We spent a fun-filled day with Myron and Susan Van Houweling. Lunched at the Jefferson tea garden. A rare treat for me. We have never had a disappointing meal there and we never leave hungry. Then we reminisced about Magnolia Park and wondered what the season will hold for us this season.
Today Mickey called and asked me to meet her at the museum at 1:50. So when I got there we found out we were on the wrong day. So 4 of us decided to visit the culprit who gave us the wrong info. Sue welcomed us in her usual friendly manner and we had a fun and lively conversation. When we left there we checked in with Butch then went to Deal's Orchard to pick up some special treats.
Returned to our place and enjoyed a cocktail or two then went for supper at Casa de Oro, our fine and authentic Mexican restaurant.
Now sitting in the recliner with our feet up!

Still quietly living
We have been leading a very chilled life these days. We are doing a pretty good job of living in the moment. This is pretty good for me, a former worry-wart and micro-manager. We worry-warts and micromanagers eventually get tired!
I have made the following recipe two times and I like it so much I can hardly wait to make it again. And the real shocker? Butch liked it too!

Green Chile Chicken-Stuffed Spaghetti Squash
Ingredients
1 spaghetti squash
1 1/2 cups cooked shredded chicken breast
1/2 cup green enchilada sauce, use a gluten-free version to make this recipe gluten-free, I use this
1 green onion, thinly sliced
4 ounce can diced green chiles
1/2 cup frozen corn, defrosted
1 tablespoon chopped cilantro (optional)
1/4 cup plain non-fat Greek yogurt
1/2 cup shredded sharp cheddar or Monterey Jack cheese, I used a combination of both
1 spaghetti squash
1 1/2 cups cooked shredded chicken breast
1/2 cup green enchilada sauce, use a gluten-free version to make this recipe gluten-free, I use this
1 green onion, thinly sliced
4 ounce can diced green chiles
1/2 cup frozen corn, defrosted
1 tablespoon chopped cilantro (optional)
1/4 cup plain non-fat Greek yogurt
1/2 cup shredded sharp cheddar or Monterey Jack cheese, I used a combination of both
Instructions
Spaghetti Squash
Preheat oven to 400 degrees and line baking sheet with foil.
Cut the spaghetti squash in half lengthwise, spray the inside with cooking spray and sprinkle with salt and pepper.
Place the squash cut-side down on the baking sheet and roast until tender, about 30-40 minutes.
Let the squash cool for about 10 minutes before scooping out the strands with a fork and placing them in a bowl.
Reserve the squash skins placing them cut side up back on the foil-lined baking sheet.
Use your hands to squeeze out excess liquid from the spaghetti squash strands, then return them to the bowl. Important step!

Once the mixture is warmed through remove from the heat and stir in the Greek yogurt.
Pour the enchilada filling in with the spaghetti squash strands and stir together until combined.
Scoop the filling back into the spaghetti squash shells and top with the shredded cheese.
Place the spaghetti squash back onto the baking sheet and broil in the oven until the cheese is melted, then serve.

Weekend
We enjoyed our full and fun weekend. We went to Jason and Laura's for breakfast and the parade and I took a few pictures of their well-tended yard and fine art pieces.
After the parade, we wandered around the vendors to see if anything caught our eye. It didn't.
After that we came home and having been invited to Leo and Keri's for supper we had a wee nap before going to their place to meet the grandboys. Brady has grown into a fine young 4 year old with very good manners and his little brother Beckett is a one year old who promises to hold much fun for all of us in the future. It was a good time watching these two. Supper was good too!
And today we are having a good Sunday. Went for a walk, have a roast in the crockpot and did some more backsplash work in the house bathroom.
So come on Monday we are ready for whatever you may have in store.
Pufferbilly Parade
We have missed the Pufferbilly Parade for a few years by going to the Clay County Fair so it was a treat to see it again. It is really a very nice parade with a hundred entries. We enjoyed breakfast at Jason and Laura's place before the parade. Breakfast was done very well too! Delicious!
