Chugging along

We have been doing the ordinary things of everyday life so nothing earth shattering to report.

Russ stopped by last night and says he will be here Saturday...unless it is raining.

Butch is getting some pre-cancerous areas burned off of his face this morning. That may slow him down a bit. Maybe, just maybe. Might need to stay out of the sun until it heals a bit.

I had an echocardiogram yesterday. Have not seen the results yet but expect it to be okay. I had forgotten how long those take- 45 minutes to an hour. Geez!

The river is down a little from where it was a few days ago.

We had unstuffed cabbage rolls for supper last night. I gave it 5 stars last time I made it and the 5 stars still stand. It is yummy!!

Unstuffed Cabbage Rolls

Ingredients:
1 1/2 to 2 pounds lean ground beef
1 tablespoon oil
1 large onion, chopped
1 clove garlic, minced
1 small cabbage, chopped
2 cans (14.5 ounces each) diced tomatoes
1 can (8 ounces) tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt

Preparation:
In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.
Add the garlic and continue cooking for 1 minute.
Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt. Bring to a boil. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.
Yield: Serves 6 to 8
