Can Hardly Wait

Can hardly wait for what you say? To get to the land of fresh veggies all year round. I have had to give up on tomatoes(:-(, very sad face, because of canker sores in my mouth. This recipe sounded appealing to me.

Beanie Rice Salad
    When you begin with an interesting rice mix you have a head start on a unique rice salad.  Low-fat yogurt shaves fat calories while upping the calcium content. The raw vegetables can be varied if you wish: substitute celery, seeded cucumber, grated carrot, tomato and so on.
1 box or packet of cheese, broccoli and rice mix
15-ounce can of kidney beans, drained and rinsed
15-ounce can of cut green beans, drained
Medium green bell pepper, seeded and diced
Medium red sweet pepper, seeded and diced
Medium sweet onion, peeled and diced
2 cartons, 8 ounces each, of lemon flavored yogurt
    While the rice mix cooks according to package directions, prepare vegetables.  Mix vegetables and rice.  Fold the first carton of yogurt into a mixture, then add more yogurt to taste.  Serve now or chilled, as is or on a bed of lettuce. Serves six as a main dish.
